Who does not love tacos? Best comfort food when you want to throw something together in an instant. I really like making them with taco marinated tofu and mushrooms.
Chop up some mushrooms and tofu very finely into small pieces. Put these in a bowl to marinate with a couple tablespoons of olive oil, along with the taco seasoning mix bag that you get in the store. Unless you are super advanced and make your own taco seasoning. I haven't gotten there yet. And sometimes it feels quite good to be lazy anyways.
Let marinate for at least 30 min. Sauté on medium heat until brown. Then quickly turn stove up to high heat while mixing to add a quick lil crispiness to them. Remove from heat and serve. On gluten free tortilla bread, preferably.
Really like the flavour of fefferoni peppers in tacos.... and home grown sprouts is always a good idea.
Some taco sauce. And end with some freshly grated parmesan.. for the days you dip from vegan to flexitarian.
