Overnight oats with chia and raspberries

Such a great breakfast treat, and so convenient being able to whip this up before bedtime so it's ready to be devoured first thing after morning meditation. This is my favourite way to make it:

Makes 2 portions:

1,5 dl raspberries (3/4 cup)
2 dl almond or oat milk, or whichever milk you prefer (1 cup)
2 dl gluten free oats (1 cup)
3 tbsp chia seeds
1 tsp honey
1 tsp lemon juice
a small pinch of salt

Mix raspberries and almond milk well in a bowl. Using a fork works fine. Use a blender or mixer if you like the pudding to be perfectly smooth and even. Add the remaining ingredients and mix really well so that all ingredients have blended nicely. Transfer to portion cups or little bowls. Cover with lid or plastic film and cool down in fridge for at least a couple hours, but I like doing these in the evening so they're nice and ready for breakfast.

Change berries to blueberries or blackberries or whatever of your fancy for variation. Bananas and peanut butter is super good too. A bit of cardamom never hurt anyone. Options are endless.
